In 1980 Pagani took part in the Carnascialia project, a new group formed by Pasquale Minieri and Giorgio Vivaldi (both also involved in the 1978 solo album) to revive the traditional central and southern Italy folk sounds they had already rearranged as Canzoniere del Lazio.

The founders Pasquale Minieri and Giorgio Vivaldi as well as Carlo Siliotto were all previously members of that group. CARNASCIALIA released only one album. In this album the group consisted of Pasquale Minieri (guitar, bass, vocals), Giorgio Vivaldi (percussion, flute), Carlo Siliotto (violin), Demetrio Stratos (vocals), Clara Murtas (vocals), Nunzia Tambara (vocals), Piero Brega (vocals), Luciano Francisci (accordion), Tommaso Vittorini (sax), Maurizio Giammarco (sax), Mauro Pagani (violin, mandolin), Danilo Rea (piano), Marcello Vento (drums) and Pablo Romero (tin whistle).

These two former Canzoniere Del Lazio members instigated this project to try out many new, different ideas that weren't possible within the normal group format. Hence there are no two tracks with the same line-up, and Pasquale Minieri doesn't appear at all on one track! It's a desperate collection of collaborations, which eventually gave birth to the project being named after the album when they started to play as a band live. This is a super-project that was initiated by Pasquale Minieri and Giorgio Vivaldi from Canzoniere del Lazio, one of the main bands of Italian progressive folk from the '70s. The line-up is here extended to a group of fourteen elements, making it a small folk music orchestra. Two really special guests make the difference: Mauro Pagani (violin and mandolin) and Demetrio Stratos, whose unmistakable voice recites the verses of "Fiocchi di neve e bruscolini". Although the heyday of Italian progressive rock was already long gone, with this LP Carnascialia demonstrated that it was still possible to make music far from the new trends imposed in the late '70s (punk, new wave, dance, electro). a little gem that deserves recognition.

This album, strongly influenced by Mauro's love for world music (especially Eastern folk music), though quite different from his old band's work, is definitely an excellent record. In the same vein was the first and only album by ALIA MUSICA, which Pagani produced in 1979
